Breakfasts

Do you want to enjoy a traditional Yucatecan breakfast? Look no further, at Príncipe Maya we have dishes that will make you hallucinate.

Molletes ($10.00)

Príncipe Maya has for you the traditional molletes.

The molletes are made based on two toasted half buns, with a bed of refried beans, melted cheese and covered in a protein of your choice, and pico de gallo.

The proteins to choose from can be roast beef and Poc Chuc.

Motuleños eggs ($10.00)

This dish had its origin in Motul, Yucatán. According to history, it was created in 1921 by chef Jorge Siqueff, after the governor of Yucatán, Felipe Carrillo Puerto, asked him to create a breakfast for an official visit by representatives of the Mexican government.

At Príncipe Maya we make it with three tostadas covered with refried beans, eggs and peas. It is accompanied with a garnish of tomato sauce.
